Mix the butter and flour together. Heat 2 ounces of butter in a frying pan. Fry the fillets over a moderate heat until both sides are golden. Take out and put onto an ovenproof serving dish. Deglaze the frying pan by adding, little by little, the butter mixed with the flour, the cream and the chopped chervil. Scrape the bottom of the pan well with a fork. Coat the turkey with this sauce and bake in a hot oven (350F) for 10 minutes.
